Simple Grilled Salmon

I have a lot of Salmon recipes in my arsenal that I really like, but last night I wanted to try something different.  This is a tasty way to eat salmon and it will be hitting our table more this summer.

One of the great things about fish is the shorter marinating time.  One hour was all it took for the marinade to do its work.

As I was preparing to grill the salmon my boys came in the kitchen and said, "Salmon!  Yes!"  They might be picky about some other foods, but I love that they love fish.

This cooked up pretty quickly and was scarfed off everyone's plates at dinner.



Simple Grilled Salmon

1 lb. Salmon Filet
1/2 teaspoon Lemon Pepper
1/4 teaspoon Garlic Powder
1/4 Salt
dash of pepper

For the marinade:
1/4 cup olive oil
1/4 cup soy sauce
2 tablespoons lemon juice


Sprinkle the Salmon with lemon pepper, garlic powder, salt and pepper.  Feel free to vary the amounts of seasoning you use.  My kids are sensitive to heat so I used very little pepper.  Using a zip-top bag, combine olive oil, soy sauce, and lemon juice.  Place fish in bag and let marinade for 1-3 hours, refrigerated.  I like to remove my fish from the fridge about 20-30 minutes before grilling to give it time to get to room temperature before cooking. Turn on your grill about 10 minutes before you are ready to cook your fish.  When you are ready to cook, remove your fish from the marinade.  Discard marinade.  Place fish skin side down on a piece of foil with the edges turned up to prevent spillage.  Leaving the foil under the salmon grill on med-high heat with lid closed about 12 minutes, then remove the foil, turn the fish and grill for about 4 more minutes.  Cooking time with vary with the thickness of the fish.  The fish is fully cooked when the fattest portion is opaque.

This is delicious served with broccoli and wild rice.
